This healthy raw coconut chocolate chip cookie dough recipe is my go-to quick and easy dessert that you don’t have to feel guilty about. This awesome recipe has no butter, eggs, flour or refined sugar (other than in the chocolate chips). Did I mention it’s vegan and gluten free? But seriously, you would never guess it.
This cookie dough actually saved my sanity today. Ok, I may be exaggerating a little bit, but not really. I’ve had a sick toddler at home for the past couple of days. I was hoping we’d be at least able to fake it going to pre-school, but I couldn’t live with myself doing that. Also, when he woke up with the “glazed donut” face and sounding like Doc Holiday with full-blown TB, I had to call it. My otherwise really mellow guy has been a whiny mess all day barking orders like a drill sergeant.

“No…the potty episode!”
“Wahhh!” (throws strawberries at window)
You had to feel for the guy, but nap time couldn’t come soon enough. Finally down for his nap by 3:25pm, I grabbed the food processor out and the ingredients, and five minutes later I was finally sitting down, and eating yummy, not so guilty, cookie dough!
Healthy Raw Coconut Chocolate Chip Cookie Dough Recipe

- 1 cup whole oats
- 1 ripe banana
- 1/2 cup grated dry unsweetened coconut
- 1 Tablespoon local raw honey
- 2 Tablespoons coconut oil
- 1 tsp vanilla
- 1/4 tsp fine sea salt
- 1/2 cup semi-sweet chocolate chips
In a food processor add all ingredients except for the chocolate chips. Pulse in food processor until incorporated. Mix the chocolate chips in the bowl. You can eat immediately, or put in refrigerator for 20 minutes to shape into cookie dough balls for the kids (or young at heart adults). Store in fridge. Best at room temp. Enjoy!
